green sauce
this pesto-like sauce is so delicious on pizza! aside from it being tasty, it is also zero-waste because it uses carrot top greens. carrots are mighty high in vitamin a and beta carotene, but the tops are nutrient dense as well. the greens are rich in potassium, phytonutrients and calcium. nutritional yeast gives the sauce an umami, "cheesy" flavor which makes it perfect on a dairy-free pizza or flatbread. i love using this sauce on a balsamic onion, broccoli and artichoke heart flatbread. the possibilities are endless! enjoy!
yields about 1 1/2 cups
carrot tops from one bunch of carrots (about 5-6 carrots)
2 cloves of garlic
1 c. raw cashews
2 tbsp. nutritional yeast
1 tsp. sea salt
1 c. extra-virgin olive oil
1 tbsp. fresh lemon juice
to enjoy:
roughly chop the carrot tops, stalks and leaves included. place the chopped carrot tops in a food processor fitted with an s-blade attachment. pulse the tops and garlic together until fine. add the cashews, nutritional yeast, salt, olive oil and lemon juice and process until smooth. pour sauce into an airtight glass container and store in the fridge for up to 2 weeks. spread on pizza, sandwiches, pasta and more!
