blueberry chia waffles
this waffles compliment a summery Sunday morning perfectly. the combination of the almond flour, chickpea flour, and chia seeds give these waffles loads of protein to start your day. enjoy with coconut whipped cream, maple syrup, almond butter, or more berries.
yields 6, 8-inch waffles
1 c. almond flour
1 c. chickpea flour
2 tbsp. arrowroot powder
1 tbsp. black chia seeds
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. full-fat coconut milk
1/4 c. water
1/3 c. coconut oil, melted + more for greasing
1 pt. blueberries, rinsed and patted dry
to enjoy:
in a large bowl, mix together the flours, arrowroot, chia seeds, baking soda, and salt until combined. add the eggs, coconut milk, water, and coconut oil. mix thoroughly until the batter is smooth. fold in the blueberries.
preheat a waffle iron and grease with coconut oil. use a 1/3 measuring cup to scoop a helping of batter. cook the waffle according to your waffle machine's instructions and repeat with the remaining batter. enjoy with almond butter and more berries!
