chunky monkey banana bread muffins

i adapted this recipe from Lindsey S Love's recipe from her blog Dolly and Oatmeal. these muffins make a satisfying breakfast or snack, and the smell they produce from the oven will send you running to make a pot of coffee to go along with them!

yields 1 dozen

1 1/2 c. almond flour

1/4 c. arrowroot powder

1/3 c. coconut sugar

1 tsp. baking soda

1/2 tsp. salt

1 c. mashed banana

1/2 c. coconut oil, melted

2 eggs

1 tsp. vanilla extract

1 c. chocolate chunks

1/2 c. chopped walnuts

to enjoy:

  • preheat the oven to 350 and grease a 12 muffin tin with coconut oil.

  • in a large bowl, mix together the almond flour, arrowroot, coconut sugar, baking soda, and salt. set aside. in another bowl thoroughly mix the mashed banana, coconut oil, eggs, and vanilla until combined. add the wet ingredients to the dry and mix until a batter forms. fold in the chocolate chunks and walnuts until incorporated. evenly divide the batter in the muffin tin. bake 25-20 minutes until a toothpick comes out clean when poked in a muffin. enjoy with a cup of coffee.
