hot chocolate

a snowy day calls for a mug of hot chocolate, a blanket and a book! this thick drink is sure to warm you up on a cold, winter afternoon. coconut milk is rich in iron, magnesium, vitamin c, and healthy fats which reinforces your immune system. drinking this dairy-free alternative improves heart health by lowering cholesterol and blood pressure, helps improve digestion and joint inflammation, and can help manage blood sugar levels. due to coconut milk's amount of healthy fats, this helps slows the rate at which sugar is released into your bloodstream. this helps control insulin levels and sugar spikes. if you want to spice up this drink, try adding some cinnamon, which also lowers blood sugar by imitating the effects of insulin.

serves 4

1, 13.5 oz. can full-fat coconut milk

1/4 c. unsweetened 100% cocoa powder

1 tbsp. maple syrup

to enjoy:

  • in a small saucepan over medium heat, combine all ingredients and whisk until smooth. allow to heat up so that all chocolate clumps are incorporated. divide into 4 mugs and enjoy with good company, a dollop of coconut whipped cream, and a dusting of cinnamon!
