kale crackers
the cooler weather brings in a whole new season of fruits and vegetables. fall is the time when kale thrives! from soups, to salads to chips, kale is a versatile green is highly nutritious. these crackers are such a satisfying, wholesome snack! the kale packs the power in calcium and vitamin C while the cashews provide healthy fats. these are wonderful on their own, but i especially love them with scrambled eggs in the morning.
yields 22 crackers, 3”x1.5”
2 c. raw cashews 2 c. torn green kale leaves, loosely packed 4 garlic cloves 1 tsp. salt 1 tsp. onion powder 3 tbsp. nutritional yeast 1 tbsp. apple cider vinegar 1 tbsp. olive oil
to enjoy:
preheat the oven to 325 and line 2 baking sheets with parchment paper.
pulse the cashews and kale in a food processor until crumbs form. add the rest of the ingredients and pulse until a dough forms.
roll out the dough in-between two pieces of parchment until an ⅛ in. thick. using a pizza roller, cut into 2 in. x 4 in. rectangles. arrange the crackers on the baking shet and bake for 25 minutes, until edges are golden and the tops are crispy.
