chocolate thin mints (gf+df+paleo)


thin mints are a girl scout classic, but are loaded with unnecessary added sugars and bits of trans fat. although, you can feel great about eating these biscuits because they contain no refined sugars and have a healthy amount of fat from the coconut oil. this recipe is from cassy joy garcia's blog fed & fit. her thin mint copycat recipe brings a delectable chocolate and mint flavor to the traditional cookie we know and love. but there's a hidden bonus...they are gluten free, dairy free, and paleo! so let's bake some cookies...

makes 36 cookies

dry

3 c. sifted almond flour

4 tbsp. unsweetened cocoa powder

1/2 tsp. baking soda

1/8 tsp. salt

2 c. dark chocolate chips

wet

1/3 c. honey

2 tbsp. coconut oil

1 tsp. peppermint extract

1 egg

1 c. full-fat coconut milk

how to enjoy these minty biscuits:

  • preheat oven to 350 degrees fahrenheit and line two baking sheets with parchment paper.

  • in a medium bowl, whisk together almond flour, cocoa powder, baking soda, and salt. in a small saucepan over medium heat, melt the coconut oil. whisk in honey, 1/2 tsp. peppermint extract, and egg. add the wet ingredients to the dry and mix until thoroughly combined.

  • scoop a tbsp. of the dough onto the baking sheet and flatten into a circle. repeat until no dough remains. bake for 11 to 13 minutes, or until semi-soft. keep an eye on them so they do not burn.

  • once out of the oven, place them on a cooling rack and let sit for 15 minutes to allow to harden.

  • in a double boiler, melt the chocolate chips and whisk in 1/2 tsp. of peppermint extract and the coconut milk. if the mixture is too thick, add a tbsp. of coconut milk at a time until smooth.

  • line a platter with parchment paper. dunk one cookie at a time into the chocolate frosting, shaking off the excess frosting, or removing it with a fork. place the cookie onto the lined platter, and repeat until no cookies remain. let the chocolate set on the cookies for 30 minutes, then place in the fridge for an hour. enjoy!
