apple crumb cake (gf+df)
cinnamon and apple. such a simple combination of flavors, yet it produces a taste that defines "fall". i know that it is march and spring is right around the corner, but to me, apples and cinnamon can be eaten all year long. this crumbly cake was slightly altered from tessa fisher’s gluten-free apple crumb cake recipe. i reduced the amount of coconut sugar from the original recipe, because the apple chunks infuse its own sweetness into the cake, and i only used one apple. this cake has a low glycemic index because of the coconut sugar and cinnamon, and contains natural fat from the coconut oil. cinnamon is the top spice known to assist sugar in your bloodstream, it slows blood sugar spikes, so this cake is fit for diabetics, as well as people on a gluten free or dairy free diet. be sure to check out tessa fisher’s blog salted plains…now let’s make a cake!
recipe adapted from Tessa fisher's gluten-free apple crumb cake

3 c. almond flour (not almond meal)
1/4 c. arrowroot flour
1/2 c. coconut sugar
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
wet
1/2 c. + 2 tbsp. coconut oil
2 eggs
1 tsp. vanilla extract
1/4 c. unsweetened almond milk
1 large apple, cored, peeled and chopped into 1/4 inch cubes
how to enjoy this warm cinnamon creation:
preheat the oven to 350 degrees fahrenheit, grease a 9x9 square pan with butter, coconut oil, or olive oil. set aside.
in a stand-on mixer with whisk attachment, cream together coconut oil and coconut sugar. add almond flour, arrowroot flour, cinnamon, and salt. combine until the mixture becomes crumbly. take one cup of the mixture and place in a separate bowl (this will be used for the crumb topping).
whisk in baking powder and baking soda. add vanilla, eggs, and almond milk and mix thoroughly. fold chopped apples into the batter and scoop batter into the baking dish. spread evenly with a spatula and sprinkle reserved crumb mixture evenly on top.
bake for 35 to 40 minutes, or until a fork placed in the center comes clean. serve warm alone or with dairy free vanilla ice cream. enjoy!
