delectable pitas


these are the fluffiest, softest pitas in the whole world, brought to you by one of my favorite food bloggers and chefs, molly yeh. simple to make, yet fast to devour, molly yeh has created a quick and simple way to enjoy homemade pitas instead of the ones at a grocery store. you will never go back to buying grocery store pitas again...enjoy!

whole wheat pitas

makes 12

dry

2 1/4 tsp. active dry yeast 1 1/2 tbsp. turbinado cane sugar 1 1/2 tsp. kosher salt 3 3/4 c. whole wheat bread flour

wet

1 1/2 c. warm water

3 tbsp. olive oil

how to enjoy these fluffy delights:

  • mix together the yeast, water and sugar and let it sit for a couple minutes, until the yeast is activated and the mixture is foamy. pour activated yeast into a stand-on mixer with dough hook attachment. with the mixer running on low, add the salt and oil and then gradually add the flour (about 1 cup at a time) until the dough no longer sticks to the bowl. the dough should be smooth and slightly sticky.

  • lightly coat a large bowl with olive oil and place the dough in the bowl. cover the bowl and let the dough rise for 2 hours.

  • turn the dough onto a floured surface and divide it into 24 equal pieces. form each piece by rolling them into balls. place the balls an inch apart on a piece of parchment paper, cover them in plastic wrap, and let rise for 30 minutes.

  • preheat the oven to 500 degrees fahrenheit and line two baking sheets with parchment paper.

  • with a rolling pin, roll out the balls of dough until a 1/4 inch thick. place them on the baking sheets and bake for about 5 minutes, or until they're puffy and just starting to brown. leftovers can be frozen and reheated in the toaster. enjoy with molly yeh's falafel!
