pesto (vegan)
pesto! you can put it on anything; pizza, pasta, sautéed scallops or shrimp, veggies, sandwiches, flatbreads, or even in salad dressing! this is a wonderful pesto recipe that has a nutty texture and strong basil taste. also, it's vegan! which makes it great for anyone out there who is vegan and still wants to enjoy pesto. bon appetit!
yields 1 small bowl
2 c. basil leaves
2 tbsp. lemon juice
1/2 tsp. salt
1/2 c. olive oil
1/4-1/2 c. chopped walnuts (based on desired thickness)
how to enjoy this flavorful sauce:
in a food processor, pulse the basil, salt and lemon juice together until a fine mixture forms. add the olive oil and pulse again until smooth.
finally, add the walnuts and pulse a couple more times, until the pesto comes together into desired consistency. enjoy!
