chocolate chewy snowcaps adapted from kim severson
yields 12 large cookies
3 c. confectioner's sugar
3/4 c. unsweetened cocoa powder
1/2 tsp. salt
4 oz. 72% chocolate, chopped
1 1/2 c. pecans or walnuts, chopped
4 large egg
how to enjoy these nutty chocolate savories:
preheat oven to 325 degrees fahrenheit and line a baking sheet with parchment paper.
in a medium bowl, whisk together confectioner's sugar, cocoa powder, and salt. stir in the chopped pecans, or walnuts, and chopped chocolate.
whisk in the egg whites until the batter thickens. to form the cookies, take a spoon and scoop a golf ball sized amount onto the baking sheet.
place in the oven for 12-15 minutes, until cracked at the top. let rest on the pan for 5 minutes and then place on a cookie rack. enjoy!
